Strawberry Chia Seed Pudding
Who says dessert has to be all bad? This strawberry chia seed pudding recipe is a delight and most of the sweetness comes from natural sources instead of refined sugar. While it’s definitely still a treat it’s a great alternative to processed and full of refined sugar desserts. Try it the next time you have company! Please note is that this dessert needs to set over night so be sure to think ahead.
So here is what you need to gather:
-6 tablespoons of chia seeds
-2 cups of milk (whatever kind or variety you prefer, I used vanilla soy milk)
-3 tablespoons of honey
-2 teaspoons of vanilla extract
-1 cup of strawberries
First mix the chia seeds and honey in a bowl. Then add in the milk and vanilla. Since I used a sweetened milk I used 3 tablespoons of honey, if yours is unsweeted you may wish to increase the honey to 4 tablespoons. Refrigerate overnight. When ready to serve divide into 4 small pudding cups and top with cut up strawberries. Enjoy!
