Grilled Lemon-Herb Chicken Salad

This Lemon-Herb Chicken Salad is refreshing, colourful, and rich in protein to support muscle strength for adults 50+. The bright lemon marinade adds a zesty boost that perfectly complements seasonal vegetables.

Ingredients

For the chicken:

  • 1 chicken breast

     

  • 1 tablespoon olive oil

     

  • 1 tablespoon lemon juice

     

  • ½ teaspoon dried oregano

     

  • Salt & pepper

     

For the salad:

  • 2 cups mixed greens

     

  • ½ cup cherry tomatoes, halved

     

  • ¼ cup cucumber slices

     

  • 2 tablespoons shredded carrots

     

Instructions

  1. Marinate chicken with olive oil, lemon juice, oregano, salt, and pepper for 10 minutes.

     

  2. Grill or pan-sear for 5–6 minutes per side; slice.

     

  3. Assemble greens, tomatoes, cucumber, and carrots.

     

  4. Top with sliced chicken.

     

  5. Optional: drizzle with lemon vinaigrette.
