Chicken & Spinach Quinoa Stir-Fry

Ingredients

  • 1 cup cooked quinoa 
  • 1 tablespoon olive oil 
  • 1 chicken breast, diced 
  • 1 small onion, chopped 
  • 1 garlic clove, minced 
  • 2 cups fresh spinach 
  • ½ teaspoon garlic powder 
  • ¼ teaspoon salt 
  • ¼ teaspoon pepper 

Instructions

  1. Heat olive oil in a skillet over medium heat. 
  2. Add chicken and cook until no longer pink. 
  3. Stir in onion and garlic; cook 3–4 minutes. 
  4. Add quinoa, spinach, garlic powder, salt, and pepper. 
  5. Stir and cook for 2–3 minutes until spinach wilts. 
  6. Serve warm.
